Quarantine Cooking with Commons Chef: Garlic Infused Mashed Potatoes!

Today he's cooking up Garlic Infused Mashed Potatoes!
What you’ll need:
4 lb. yellow Yukon Gold potatoes (about 8), quartered - peeling is NOT necessary
3 Tsp. Kosher salt or to taste
2 c. half-and-half or heavy cream
4 tbsp. unsalted butter
1 head garlic, pop out all cloves
2 cups Olive Oil
2 - 3 Tbsp. Black Pepper or to taste
Freshly grated or ground nutmeg, for serving
Procedure:
Place potatoes in a large pot, add enough cold water to cover and bring to a boil.
Add 1 teaspoon salt, reduce heat, and simmer until just tender, 15 to 18 minutes.
Meanwhile, take the garlic cloves and olive oil, place both in a saucepan separately and let simmer for 10-12 minutes or until garlic really soaks and becomes “mushy” golden color.
Drain potatoes and return them back to the pot.
Add half-and-half, butter, and black pepper to the potatoes.
Strain garlic cloves from olive oil and then add cloves to the potatoes! PRO TIP: use garlic-infused olive oil for garlic bread or dipping.
Mix and reduce heat and simmer 3 minutes; remove from heat.
Add 2 teaspoons salt (or to taste) and mash to desired consistency!!!
Sprinkle with nutmeg before serving if desired.
